Easy orange and poppyseed loaf cake
This is a very easy recipe that can be played with in terms of ingredients. White sugar/flour probably work as well as wholemeal, and other ground seeds/berries probably as well as linwoods. Nuts may make a nice addition.
Ingredients
3 eggs
150g yoghurt (natural yoghurt or soya yoghurt – probably any yoghurt would work)
1/2 teaspoon baking soda
1tsp vanilla essence
75-100g demerara sugar
140g butter or margarine
25-35g Linwoods flax sunflower pumpkin sesame seeds and goji berries (if omitted then add another 25g flour)
185g flour (I used plain wholemeal)
20g poppyseed
pumpkin seeds if desired (suggested 10-20g)
1tsp baking powder
2 oranges (or 3 lemons, or a mixture of lemon and limes – or try a different combination)
Mix the egg, baking soda, vanilla and yoghurt together
In a separate bowl mix the margarine/butter with the sugar, then add the other dry ingredients
Grate the orange zest and add to the liquid ingredients along with a bit of the orange juice
Add liquid to the dry ingredients and mix. If the mix seems quite thick, use a bit of milk.
Put in a greased loaf tin and bake in a pre-heated fan oven at 180c for around 35-45minutes.
For icing – start with 2tbsp or thereabouts of icing sugar. Squeeze a small amount of orange (or fruit of choice) juice from one of the oranges until the icing is runny, but still quite thick. use a chopstick or similar to make holes in the top of the loaf cake when it comes out of the oven, and pour the icing over, allowing some of the icing to go into the holes. Allow to cool slightly and remove from the loaf tin, then allow to cool on a wire rack.
